Here at L’ensoleiller, locally grown and produced food takes center stage as we cooperate with our manufacturers to put out a menu with vegetables that are grown using no pesticides or other agricultural chemicals; instead, our organic, seasonal vegetables are grown using natural farming techniques. Additionally, we get fresh fish, Toyama beef and pork as well as wild game like wild boar and bear shipped to our restaurant via the Noto train from Himi and Shiminato.
